The Best Ever Allergy-Friendly Chocolate Chip Cookies

Finding a treat that works for an allergy-friendly diet can feel like a daunting task—especially with restrictions like gluten, dairy, eggs, soy, or nuts. After testing countless recipes that came out dry and crumbly, I finally created the perfect soft, gooey chocolate chip cookie recipe that ticks all the boxes!
I originally made these for a client with leaky gut who had a very short list of "go-ahead" foods. They needed something comforting yet gentle on their digestion, and this recipe delivered.
These cookies are made with gut-friendly, simple ingredients like light buckwheat flour and coconut oil, making them an excellent option for those with sensitive systems.
Coconut sugar brings a caramel-like richness and subtle sweetness, but if you’re after a more classic cookie flavor, try using half coconut sugar and half brown sugar. Best of all?
They’re quick to make and won’t leave you feeling bloated or uncomfortable.
The Best Ever Allergy-Friendly Chocolate Chip Cookies
Makes 12-14 cookies
Ingredients
• 1 cup light-colored buckwheat flour (ground buckwheat groats)
• 1/2 cup organic coconut sugar or brown sugar (or a mix of both)
• 1/3 cup melted coconut oil
• 2 tbsp water
• 1 tsp vanilla extract
• 1/2 tsp fine sea salt
• 1/2 tsp baking soda
• 1 tsp apple cider vinegar
• 1/2 cup dark chocolate chips or chunks*
Instructions
1. Preheat your oven to 325°F (165°C).
2. In a mixing bowl, combine coconut sugar, coconut oil, water, and vanilla extract until smooth.
3. Add buckwheat flour, salt, and baking soda, then mix until just combined.
4. Stir in the apple cider vinegar and chocolate chips.
5. Scoop tablespoon-sized portions onto a lined baking sheet.
6. Bake for 8 minutes, or until the edges are just set. Be careful not to overcook
7. Cool for 5 minutes on the tray before transferring to a wire rack.
*Look for 85% or more dark chocolate to avoid dairy and maximize nutritional value
